Low Carb Cinnamon Apple Muffins
These low carb apple cinnamon muffins are the perfect breakfast recipe sweetened with low glycemic monk fruit sweetener . They bake in just 35 minutes and each serving contains 2 muffins for a hearty breakfast that will keep you satisfied .
Ingredients:
- 1 cup almond flour
- 3 tablespoons coconut flour
- 2 tablespoons of Organic Monk's Fruit Powder
- 1 tablespoon cinnamon
- 2 teaspoons vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 1/2 cup of whole milk
- 2 tablespoons butter (unsalted) melted
- 1/2 cup peeled/shredded green apple
At your service
2 cups of 2% plain Greek yogurt
1/4 cup pomegranate seeds
Instructions
- Preheat oven to 350ºF and line 8 muffin cup cavities with paper liners. In a medium bowl, mix almond flour, coconut flour, sweetener NOW Foods Monkfruit , cinnamon, baking powder and salt.
- In another bowl, whisk together the eggs, almond milk, and melted butter. Gradually mix the wet ingredients into the dry ones. Add the grated apple.
- Evenly distribute batter between muffin cups and bake for 30-35 minutes. Cool muffins at room temperature for 10 minutes.
- Place 2 muffins in large 4-pan compartments. Divide the yogurt into 4 smaller compartments and sprinkle with pomegranate seeds.
